Describe the performance of characteristics of eggs Essay Egg white and yolk contain protein. Ovalbumin is present in egg white, however globulin and albumin are also present in a very small amount. Whereas egg yolk contains protein in the form of lipoproteins, which are a combination of proteins and lipids. The most important complex lipid in egg yolk is lecithin. Lecithin gives the egg yolk the properties of a stable emulsion. The fat molecules in the egg yolk are held in an emulsion by lecithin. Eggs have three main performance characteristics and they a coagulation, which includes setting, binding, coating, thickening, enriching and glazing, secondly they can be whisked to create foams and aerate mixtures and called aeration and lastly emulsifiers. Coagulation is the process in which proteins change from their natural liquid state into a gel or a solid. This happens because each protein molecule is constructed from long chains of amino acids joined by peptide bonds. The bonds are weak and when heat, acid or mechanical action is applied they start to break. The changes are permanent. When the protein changes it physical structure when it coagulates is called denaturation. Syneresis can occur when the egg is overcooked. This is when the texture becomes porous as the protein shrinks and pockets of water are left in the product. Between 60-65C is the temperature which egg whites start to coagulate and the result of this the egg white changes appearance from transparent like to white and the texture will be from gel like to solid texture. Egg yolk starts to coagulate at a higher temperature than egg white, it begins coagulating at 65C and finish at 70C. From the darker yellow appearance of the egg yolk it will turn into a lighter yellow yolk and from runny yolk it can go to powdery solid yolk. There are a number of factors that will affect coagulation. A firmer set can be achieved at a lower temperature if an acid such as lemon juice is added. A looser set and higher coagulation temperature is achieved by the addition of sugar to the mixture. The quantity of egg yolk determines the strength of the set mixture. A higher proportion of egg yolks or whole eggs will produce firmer or thicker custard. A low heat achieves gentle heat transference, which produce perfect conditions for a coagulation. Aeration is when egg white is whisked. Foam is formed when air is dispersed through the liquid egg white. Egg whites can be aerated due to the ability of the ovalbu, in to stretch and hold air. When egg whites is whisked the proteins are denatures and uncoil. This forms a 3D air / liquid structure that can hold air when folded into food mixtures. The foam is stable but its properties can be affected by the use of additional ingredients or conditions. First factor that can affect foam formation is salt. It decreases the pH of the egg white and this increases the resistance to foam, so the time taken to foam is increased. It gives the foam more stable and it enhances the flavour. Second factor is sugar. Sugar interferes with the bonds that form as the egg whites uncoil. Therefore the whisking time is increased and the resulting foam is denser, however the foam is more stable. This factor is commonly used for meringues. Fat affects foam formation. Fat such as egg yolk prevents new bonds being formed in the structure. Fourthly alkalis will increase the pH of the foam, decreasing the foaming time but making the foam stable. Lastly will be acids. Acids such as tartaric and acetic will soften the foam. Because the fat in the egg yolk, it inhibits the aeration recipes are usually for egg whites. However sponge cakes do use whole eggs. As I was reading the story I was bothered because of some complication of the events happened. It is the only story that I have encountered for the rest of my college which I have to go back to what I have just read. The situation in postmodern fantasy is more complicated. My own interest is not in the entire field of speculative fiction but only in the modern tale, which is descended from the literary fairy tale and the philosophical tale and, in particular, in modern tales by Filipino women who write in English. Well as far as I know, it is all about love on the night of May, the main character is Anastasia DoÑa Agueda which they call as a witch, Don badoy montiya as a devil and the girl which is the daughter of Agueda. This is an example of realism in fictional novel in which romance and love is occurred. I think Nick Joaquin is interested in the house of the middle class Maynilans. The boys way back on the past were very gentleman, good looking and very loyal to his love one. The story revolves mostly around Badoy and Agueda and the horrible marriage they had together. Badoy was once madly in love with Agueda, mostly due to her looks from the description in the book. He did not know much about her when they were younger and Agueda refused him at first. Later on Agueda is seen using a magic mirror asking who she should wed. The mirror replied to her that it should be Badoy, the man she had first refused. When Don Badoy Montiya forced Agueda to marry him, it shows the status of the women during the past. Love is a splendid thing, it just happened, as most romantics say that it how goes for Badoy and Agueda. Badoy told his children how he courted their mother to have a strong relation to them. The climax of the story is like ruefully causing sorrow or pity, pitiable and deplorable. But as I read it, I realize that this is all about a Doctor which is Lazaro who is very much dedicated with his profession but have lost his faith in God and time for his family. He lost his faith in God at the time his younger son died, who actually committed suicide and also because he witness people who is suffering from deep pain and yet they still die. He began to question God why there is so much suffering in the world. Dr. Lazaro devoted his time to his profession that made him lost time for his family, that he doesn’t even have a chance to be closer with his older son. But the scene that really captures my attention is when Dr. Lazaro and his son attended a sick child but unfortunately Dr. Lazaro failed to rescue the child, then the son baptized the child before it died. While on their way home Dr. Lazaro had a chance to talk to his son and ask  about the baptism that his son made. Because of that, it made him to reflect on his life and he’s belief and wonder again about the teachings of the church which I think bring backed Dr. Lazaro’s faith to God. As I continually reading this, it reminded me the story of Lazarus in the Bible. Lazarus who’s resurrected because of Martha’s faith. Well, this story made me realize that we should not lose faith to God. Everything happens for a reason and God always is in control. In the end, we should not lose hope to God because without him, we are nothing.

They are gradually shedding the prejudices and passions that had made them cling to the illusory goods of their earthly existence, and getting ready, through their painful purgation, for the permanent bliss to come. We shall see how, by the very progression that distinguishes them among themselves, the three main characters are increasingly detached from the worldly values and increasingly ready for the final step. In one of the more recent  «lecturae » Giambattista Salinari (1969, 311 and 313f) finds that this canto is marked by a high degree of lyricism, considering the progression of the three generic ingredients of the whole poem, namely the descriptive (or epic), the dramatic, and the lyric. Democratic values are the fundamental beliefs that founded the United States and represent the core of America. Throughout history, many reform movements sought to expand these strong values that represent the unity among Americans through â€Å"life, liberty, and the pursuit of happiness. † The magnification of these principles can be especially seen through the time period of 1825-1850, where much change was beginning to occur. While all of these reforms sought to expand the democratic ideals, only certain movements succeeded and presented the deserved freedom of rights to all.Movements involving religion, juvenile institutions, and women’s rights supported and expanded upon these ideals while other aspects such as temperance and utopianism failed to offer the true meaning. Foremost, the Second Great Awakening, a religious revival, helped to expand democratic ideals by raising the standards and morals of the common man. Charles G. Finney believed that if people focuse d on religion and the church then â€Å"†¦the reformation and salvation of sinners will follow,† (Doc B).He said that it would also lead to the conversion of many diverse people including â€Å"harlots, drunkards, and infidels,† due to reforms in the church. With the belief that goodness led to salvation, many people in the communities were surrounded by good deeds for humanity. Furthermore, the reformation of temperance tried to expand democratic ideals but failed because it tried to control the public and restrict their freedoms of drinking.The picture titled â€Å"The Drunkard Progress: From First Glass to the Grave,† presents a long process on how alcohol tore families apart and aimed at trying to force better moral judgment upon people, (Doc H). Although temperance was ultimately a matter of will power, more people were beginning to express their views upon different aspects. My mom has helped me a lot in life whether its figuring out how to do something, helping me achieve my goals, or telling me not to give up. I can ask my mom for advice and talk to her about anything. My mom is the main reason that i am doing sports in high school. I have always wanted to do sports but i have always been shy and scared to try new things. I didn't want to try out because i was afraid i wouldn't make the team. She encouraged me to try and and i made the team thanks to her.I can talk to my mom about anything. My mom was there for me when i switched schools and i didn't know anybody. I would talk to her and she would tell me just be your self and don't let anybody change you. She is someone i constantly go to when i have no one to talk to. We might play around a lot but I know when she is joking and i know when she is being serious with me. She told me to always try my best.She told me that even if i feel like I'm going to fail to always try me hardest because i never know what could happen. She also told me to never give up.
